Salt rubbed & brined beef tha t is air dried for 6 months. A spicy nose reflects the dry rub of herbs.

Parmigiano- Reggiano D.O.P (ITA)

Cowâ€™s milk che es e aged 12 months. Often compared to parmigiano although younger & creamier.
Canestra to Siciliano
Sheep milkâ€™s cheese aged 8 months. Intense & spicy flavor due to being infused with peppercorns.
Blue veined cheese made from unskimmed cowâ€™s milk with a very pungent & robust flavor.
