Roughly translated, "chabrol" refers to the process of adding wine to the dregs of a dish, perfectly encapsulating what co-owners Doug Penfold and Niall McCotter wanted to accomplish when they opened their charming 19-seat French bistro off of Yorkville Avenue. It’s a cooking term that’s both romantic and necessary – in dining and in life. As co-owner Niall McCotter explains, “Chabrol is about mopping up the last little bits of your sauce with baguette. It’s an approach that’s casual and caring, where you feel like you’re at home.”
Indeed, home is exactly the feeling you get when you walk into the intimate restaurant, an interior that's tucked behind its sweeping, south-facing terrace. There’s a hint of formality here – from the decor echoing an old-fashioned Parisian café to the elegant menu.
