Meet the owner

After four months of renovations, Mr. Flamingo opened quietly at the corner of Dundas and Dovercourt in September 2014. There were no press releases sent out or advertisements placed to announce their opening. Instead, owners Mikey Apples and Fan Zhang relied on word of mouth to let the neighbourhood know they had arrived. Luckily, that’s all it took; they’ve been packed every night since. With a prime location — Mr. Flamingo is located directly upstairs from the beloved local microclub Bambi’s, which is also owned by Mikey — and years of combined hospitality experience, it didn’t take much more to pull the hungry crowds in.

Executive chef Fan has more than 10 years of experience cooking at known Toronto establishments, including the Niagara Street Café, 416 Snack Bar, the Drake, and his now-closed West Queen West bar, Happy Child. It’s an impressive resumé. Yet, with a bio like “WORLD FAMOUS COOL GUY” (Fan religiously uses only caps on social media and in business correspondence alike), it’s hard to take him seriously. And that’s just the point.

“I like to treat people like they’re guests at my house having dinner. I don’t like the service to be so sterile and formal that it puts customers at unease,” Fan says. “I’m all about comfort and familiarity, rather than trying to push the envelope of edgy cuisine.”
