When Pulp Kitchen opened in 1998, there were only a handful of establishments in Toronto offering vegan menus and fresh-pressed juices. Meatless diets were far from mainstream and even somewhat controversial at the time.

“I started doing juicing way before it was new or cool," says owner Marie Crawford, who wanted to open a business that reflected her passion for health, the environment and animal rights. “Why put animals through all that pain and suffering and trauma if you don’t have to?"

Pulp Kitchen's menu offers a substantial selection of fresh-pressed juices, smoothies, elixirs, wholesome salads and meals that will not only substitute a meat diet, but give it a run for its money in flavour and nutrition. "I find that a lot of people over-consume in their lives," says Marie, who suggests a vegan diet (sans meat, eggs, dairy and honey) is all one needs to lead a healthy and active life. She's been on a vegan diet since the early '90s and says she feels fantastic. "I do the veggie bolt every day with a shot of protein and wheatgrass," she says. "When I don’t have it, I feel it."

The bright-eyed fitness fiend is also a personal trainer with a glowing reputation for improving health and well-being in her community.
