Gather your ingredients

This recipe takes just 5 minutes to prepare, 10 cook, and serves 4. Here's what you'll need:

  • 4 boneless strip steaks (about 750 g or 1 1/2 lb), trimmed of fat
  • 10 ml (2 tsp) smoked paprika
  • 5 ml (1 tsp) smoked salt
  • 5 ml (1 tsp) dark brown sugar
  • 5 ml (1 tsp) ground black pepper
  • 2 ml (1/2 tsp) ground cumin
  • 2 ml (1/2 tsp) mustard powder
  • 2 ml (1/2 tsp) garlic powder
  • 2 ml (1/2 tsp) onion powder

Put it all together

  1. Heat a grill to high.
  2. Pat steaks dry with paper towels.
  3. Mix together the paprika, salt, sugar, pepper, cumin, mustard powder, garlic powder, and onion powder. Scatter the spice rub over the steaks, and let stand at room temperature for 15 minutes.
  4. Grill the steaks until well-browned, about three minutes per side for medium-rare (63°C/145°F on an instant-read thermometer) or four to five minutes per side for medium (71°C/160°F).
  5. Let the meat rest off the heat for five minutes to redistribute the juices before serving.
