Try a spiked pumpkin pie this Thanksgiving

In honour of Thanksgiving, The Pie Commission has partnered with Scotch whisky brand Dewar’s to create two spiked pumpkin pies and the perfect pairing cocktails.

In honour of Thanksgiving, Scotch whisky brand Dewar’s has partnered with The Pie Commission to create two spiked pumpkin pies and the perfect pairing cocktails. And in the spirit of this historic holiday, they’ve decided to share the recipes! “We absolutely had to share these delicious pie and cocktail recipes so all of Toronto could enjoy with us!” says The Pie Commission Founder, Patrick Blessing.

As Close to Homemade Pies as They Come

The Pie Commission’s dessert pies are a huge hit during the holidays, but they’re best known for their savoury pies. “We like to think that we have reinvented the savoury pie in Toronto,” says Founder Patrick Blessing, “by making them with unique fillings, wholesome ingredients, and packed full of meat and veg, with no fillers or artificial ingredients.” They only use 5 ingredients!

The Inspiration

Here’s what Patrick had to say when we asked him about the inspiration behind these Thanksgiving recipes:

What inspired you to create this recipe?

Fall is our absolute favourite season here at The Pie Commission, as the chill in the air creates line ups out the door! Pumpkin pie is a traditional fave for so many pie lovers – it’s a fall classic we do again and again. This year, we thought we’d spice it up with Dewar’s, the world’s most awarded blended scotch whisky, as the flavour of their whisky blends beautifully with both sweet and savoury flavours in the pies. We wanted to create pies that would pair well with Dewar’s cocktails such as the Penicillin or the Aberfeldy Gold Fashioned, both include honey syrup, an ingredient that pairs well with our pumpkin pie.
Tell us a bit about the cocktail recipes and the inspiration behind them.
Dewar’s whisky is the perfect signature holiday sip. The tasting notes of oak, citrus, honey and vanilla inspired us to create three Thanksgiving cocktails: Penicillin, Dewar’s Dramble, and the Aberfeldy Gold Fashioned. [They] are perfect for elevating a traditional Thanksgiving feast and celebrating with family and friends. 
What’s your idea of a perfect Thanksgiving and how do these recipes achieve that?

Nothing says Thanksgiving quite like a homemade pumpkin pie. But who has time to make it these days? That’s why we strive to make everything from scratch, with no preservatives in our pastry. We aim to replicate the homemade type of pie as much as possible… even when we have to make a few hundred! And we thought we could enhance that wonderful pumpkin pie flavour by partnering with Dewar’s and using their beautiful Scotch as a key ingredient.

The Dewar’s Pumpkin Pie is available through Thanksgiving weekend, but it always sells out, so call ahead! The Dewar’s Scotch Egg Pie can be preordered anytime with a minimum order of 8 pies.

The Pie Recipes

Dewar’s Spiked Scotch Egg Pie (Serves 8)


  • 9” prepared pie shell
  • 8 eggs
  • 2 lbs breakfast sausage
  • ¾ cup bread crumbs
  • ½ cup Dewar’s 12 Whisky
  • 1 tsp sage, fresh or dry
  • 1 tsp thyme, fresh or dry
  • 1 tsp chopped parsley
  • ¼ tsp each black pepper and salt


  1. Preheat oven to 375 degrees
  2. Place six eggs in pot of cold water and bring to a boil. Boil for three minutes. Remove from heat and place in cold water bath. Peel and set aside.
  3. Set aside a small bowl of breadcrumbs and all spices.
  4. In a medium bowl, combine sausage, meat, whisky, one raw egg and three-fourths of bread crumb mixture. Mix well.
  5. Place half of sausage mixture in bottom of pie shell. Gentle nestle eggs around pie and cover with remaining sausage mixture. Blend final egg in a small bowl and brush over pie.
  6. Sprinkle remaining breadcrumb mixture on top and bake for 50 to 60 minutes until golden.
  7. Option to add a sprinkle of cheddar on top to baked pie.


Dewar’s Spiked Pumpkin Pie (Serves 8)


  • 9” prepared pie shell
  • 1 and ¾ cup of pumpkin purée
  • 1 cup packed dark brown sugar
  • 2 eggs
  • 1 tbsp all purpose flour
  • 1 tsp cinnamon
  • ½ tsp ground ginger
  • ½ tsp all spice
  • ½ tsp kosher salt
  • 1 can of evaporated milk
  • 1 cup Dewar’s 12 Whisky
  • 1 tsp vanilla


  1. Preheat oven to 350 degrees.
  2. In a small saucepan over medium heat, reduce whisky to about half of its volume.
  3. Turn off heat, add vanilla and milk.
  4. In a medium bowl, mix pumpkin, sugar, flour, spice and egg. Mix well until smooth. Gradually stir in milk mixture until fully incorporated.
  5. Pour mixture into 9-inch pie shell and bake in lower half of oven for 50 to 60 minutes.
  6. Let cool completely.
  7. Option to add a sprinkle of cheddar on top to baked pie.

The Cocktail Recipes



  • 1 and ½ parts Dewar’s 12 Blended Scotch Whisky
  • ¾ parts Lemon juice
  • ¾ parts Honey syrup
  • 3 slices of fresh ginger
  • Candied ginger garnish


Using a wooden muddler, muddle the fresh ginger in the bottom of a cocktail shaker until it is well mashed. Add the blended Scotch, lemon juice and honey syrup, and fill shaker with ice. Shake until well chilled (about 20 seconds). Strain into an ice-filled rocks glass (you may wish to double strain through a fine tea strainer to remove the small flecks of ginger), and spray the Islay Scotch over the top.


Dewar’s Dramble


  • 1 and ½ parts Dewar’s 12 Blended Scotch Whisky
  • ¾ parts Lemon juice
  • ½ parts Simple syrup
  • ¼ parts Crème du Mure
  • Blackberry garnish


Add all ingredients (minus crème de mure) to the glass. Fill with crushed ice and stir. Top with more crushed ice and then drizzle crème du mure on top. Garnish with a fresh blackberry.


Aberfeldy Gold Fashioned (A sophisticated but surprisingly simple Scotch whisky cocktail)


  • 1 and ½ parts Aberfeldy 12
  • Bar Spoon Heather Honey Syrup*
  • 2 dashes of Angostura Bitters
  • 2 dashes of Orange Bitters
  • Orange zest garnish


Add honey syrup and bitters to glass, add cubed ice, add whisky and stir. Top with more ice and stir if needed. Twist orange zest oils over the drink and garnish.

*Heather honey syrup recipe: 50/50 heather honey and hot water, sir and leave to chill.
