Lebanese-Style Middle Eastern Cuisine

Tabülè’s executive chef Rony Goraiche didn’t exactly begin his career in the kitchen. Instead, he found himself working nine to five in an office after studying actuarial science in university. But even then, there were clues that cooking was in Rony’s cards. While studying, he took on part-time work at a restaurant. There, he met his wife Diana Sideris. Also a student at the time, she was working front of house, while Rony prepared meals in the kitchen, an arrangement that would serve them well years later when they took the leap to open Tabülè.

“I realized when we got married that he was more excited about all the kitchen gifts,” Diana laughs. Rony went on to take courses in culinary arts at George Brown College. “But it comes from his roots,” she says. “A lot of the recipes are traditional - from his mom, from his dad, from his grandparents - and then he adds his own twist to it.”

Dishes for Vegetarians and Meat Lovers Alike

Tabülè’s menu showcases Rony’s take on traditional Lebanese cuisine. Trial and error, a string of good reviews and customer feedback have shaped the wide selection of starters, lunch and dinner options available today.

The restaurant’s namesake dish is made in the Lebanese style, with heaps of whole-wheat bulgur, barley, mint, tomatoes, lemon juice and olive oil. Tabülè’s falafels have received rave reviews and are made entirely from scratch. Customer favourites include the fried eggplant, garlic tomato and cauliflower starters.

What to do with so many delicious options? Diana has a solution: “We definitely encourage sharing menu dishes to get as much as you can,” she says.

Vegetarian and vegan options are staples of Middle Eastern cuisine, and Tabülè’s menu also features gluten-free items like flatbreads and falafels.

For those looking to dine at home or at the office, dishes are available for takeout and delivery, and Tabülè has also expanded to offer a catering service.

Health Conscious

From the start, the husband-and-wife team viewed quality ingredients as the foundation upon which their menu would be built. “Sourcing out the finest ingredients was definitely key for us,” Diana says. “Our focus is on using really fresh ingredients. Everything is done the traditional way, so there’s no canned chickpeas, there’s no fake lemon juice.”

Diana also acknowledges that Middle Eastern cuisine is a naturally healthy option, something that people are becoming increasingly aware of. “Tabülè is a place where everyone can eat, whether you eat meat, whether you’re a vegetarian. It accommodates everybody, so I think that’s part of the reason we’re becoming increasingly popular. Also, it’s delicious!”
