Bonnie’s Dream

Bonnie Tees has had a long and distinguished career. After completing training in healthly cuisine at the Institute Macrobiotic in Switzerland, she taught cooking for 17 years in Montreal and took part in several projects, working as a caterer and private chef. She perfected her art at the Natural Gourmet Institute in New York and worked with renowned vegetarian chefs.

During all these years, she cherished the dream of owning her own restaurant. A dream that took shape in 2005, on Notre-Dame Street West, with the opening of her own restaurant: Bonnys. Today, the restaurant is the destination for vegetarian and organic food in Griffintown.

At first, Bonnie worked according to the principles of the macrobiotic diet, advocating balance in everything. “It was more in then than it is now, but it’s still the basis of many healthy cuisine models,” she explains. The key principle she stands by in her kitchen is the use of organic ingredients – the more local and less processed as possible.

A Healthy and Tasty Vegetarian Cuisine

The dishes at Bonnys are a reinvention of traditional recipes made vegetarian and are a combination of healthy and gourmet. Bonnys’ kitchen is also free of gluten, refined sugar and dairy. “Since the restaurant is small, the quality of the food is key,” explains Bonnie. “The kitchen is also very small, so we cook just like we do at home. We make things that people know.”

On the daily menu, you’ll find dishes such as vegetable lasagna made with wheat and soy pasta, chili with black beans and quinoa, or Bonnys’ highly popular special, the veggie burger that comes in three very different versions: black beans, roasted lentils and Portobello. To accompany these comfort foods, a great variety of drinks is offered: freshly squeezed juices, artisan soda, kombucha and an excellent coffee chosen by Bonnie.

A Delight for All the Senses

Bonnys’ clientele is mainly composed of local workers, but also includes young families and visitors of the area. And regardless of where they come from, these customers have one thing in common: they come back. “My clientele is a loyal one. I often see the same faces,” says Bonnie. “Children are also always very welcome. Families feel comfortable here because there’s a lot of space.”

Indeed, as soon as you set foot inside, you can appreciate the grandeur of the space. “It’s part of what we want to offer as an experience,” says Bonnie. “We want people to feel at ease. The relaxing music, good smells coming from the semi-open kitchen and the atmosphere that comes from a decor featuring nature are some other factors that compliment a meal in our restaurant. I always want the customer to have a complete experience. I hope that in the time it takes to eat, all the senses participate in the experience.”
