Sausages the Old Fashioned Way

They don’t make sausages like they used to, but at Charcuterie Hongroise on Montreal’s iconic Saint Laurent Boulevard, you can find meats made the old fashioned way. Owner Angelo Perusko uses traditional European techniques to make all his meats, and you can really taste the difference when you take a bite.

“We use very old techniques of processing the meat to make sausages,” says Angelo. “It’s very original and natural. We use the least possible amount of preservatives. Our main preservatives are salt and smoke. It’s natural smoke too — no chemicals. That's why we are in the business. People want food that is as natural as possible, with as little chemicals as possible.”

Charcuterie Hongroise goes through as much as 2000lbs of meat each week to make its famous sausages. They are Angelo’s number one seller, and it’s what keeps people coming back.

A Long History in Montreal

Angelo was born in Italy and grew up in Yugoslavia, in what is now Croatia. At first, it wasn’t his intention to come to Canada because he grew up in a sub-tropical climate and knew about the the cold weather here. But when a friend invited him to come to Canada with him in 1966, he made the move. Eventually he became permanent resident and started building a life here.

This life-changing move was by no means easy. He had to learn the language, and he was basically starting from nothing. Angelo truly is a self-made man.

“After one or two years I started to learn the language and the lifestyle out here. It clicked in my head that this is a good business because people like to eat. So one day I said that I want to work for myself. I gave it lots of attention and hard work to get where I am today,” he says.

Now he has over 50 years of experience in his business, and many people in Montreal know him. Over the years he has perfected his craft, and is still learning new techniques.

The Times are Changing

As you can imagine, Angelo has watched the city and the way people live their lives change dramatically over the many years he's been in business, but he still persists in his craft because he believes in it.

“We still have the European food tradition, no question, but there is much less of it,” he says. “The families that still come here are often from the suburbs. Business like mine are often opening in the suburbs too because there is more parking, it’s closer to their homes, and it’s cheaper.”
