Studying biomedical engineering is not the usual path one takes to become a successful pastry chef, but this is exactly how Philippe Poncet began his career. “Baking has been a passion of mine since I was 13 years old," he recalls. "Like most childhood bakers, I started by making cakes, cookies and muffins.” Though he loved to bake, he didn't believe it was a lucrative career choice. Then living near Montreal, Philippe decided to become an engineer. Completing his studies, he never lost his love of baking. In 2008, while he was teaching at the University of Calgary, Philippe took a government-funded course for entrepreneurs and came up with the idea of launching Éclair de Lune, a bakery specializing in French pastries.

But before opening its doors, Philippe journeyed to France where he worked for an independent baker and learned the ropes of his new profession. “I was more familiar with an engineering environment than a commercial kitchen, so I did enjoy it," he says. "It was hard, because I was working non-stop for 10 straight days, but it was a good learning experience.”
