It’s a well-known fact that the French are food snobs, in the best possible way of course. They are especially passionate about wine, cheese and bread; all intrinsically embedded in the country’s culture. Thankfully, for those of us who can’t jet off to Paris to indulge, there is Au Comptoir.

This quaint, postcard-worthy café and bistro in the centre of Vancouver's bustling Kitsilano neighbourhood is the brainchild of co-owners and expatriates Julien Aubin and Maxime Bettili. Hailing from a small village on the border of the Loire Valley, Maxime grew up with parents who were passionate foodies. “My father was blind, so food was one of his favourite pleasures,” says Maxime. “We went out for dinner a lot so I learned early on what made for a great French restaurant.”

Maxime met his future business partner while they were both studying back in their native France. “After we both completed our diplomas, we went our separate ways; both of us working in different areas of the hospitality industry before coming back to France,” he recalls. “In 2010, the economy wasn’t doing well, so we decided to head to Vancouver, knowing we both wanted to open our own bistro.” The business parters launched their charming French eatery on West 4th in 2014.
