When journalist Phil Sedlacek bought Edible Flours in February 2016, it was a big story. After working as a television producer for 18 years, Phil felt it was time for a new career. The chance to buy the Kitsilano bakery and explore his passion for vegan food spoke to him. “I’d been a vegan for 20 years, and was a home baker. It was the right opportunity,” he recalls.

Located on West Broadway between Yew and Vine, Edible Flours is an alternative bakeshop offering a wide range of vegan and gluten-free items. The shop first opened in 2011, and quickly attracted a loyal fan base, which continues under Phil’s leadership today. Many patrons are local, but the bakery has grown into a destination. Phil meets customers who have been coming in from Squamish, Abbotsford, Langley and beyond for years because Edible Flours was Vancouver’s first brick-and-mortar vegan bakery.

Today, Phil's wife Cheryl helps him run the beloved bakery and cafe, which also includes a spacious seating area where patrons can relax while they indulge, watch the baking process or check out the Kitsilano crowd pass by.

From chocolate and vanilla cupcakes to lemon-blueberry scones, Edible Flours makes it all with love, and without any refined flours, sugars, dairy or eggs. On my last visit, I opted for their gluten-, egg-, dairy- and sugar-free spiced zucchini loaf, which contains organic quinoa, rice and almond flour, and is lightly sweetened with maple syrup and organic vanilla extract. To say I’ll be back again (and again) just for this moist, warm slice of heaven wouldn’t be a stretch.
