In Vancouver, Hawksworth is a name that's synonymous with one of the city's finest dining rooms, as well as one of its most respected chefs. Following the phenomenal success of his flagship eatery, Hawksworth Restaurant, award-winning chef and restauranteur David Hawksworth decided it was time for another venture – one that was a little more “playful and casual,” as he puts it.

When Nightingale opened in May 2016, it was an instant success. Whereas David's eponymous restaurant at the Rosewood Hotel Georgia is upscale fine dining at its best, his stunning new two-level dining room has a laid-back European ease to it. It's a gathering place where denim-clad foodies are as comfortable as the suits.

“After numerous trips to L.A., I was inspired by the local food scene there; its diversity is similar to Vancouver’s,” says David. “Many of the restaurants have a casual vibe but also produce some of the best food with the freshest ingredients around. I found myself looking to open something similar here in Vancouver that was also different from Hawksworth Restaurant, and that’s how Nightingale got its roots.”

    The four of us had a wonderful meal. We ordered 8 dishes to share and that was maybe one dish too many. We tried the kale salad, sweet potatoes, bacon pizza, burrata toasts, tortellini, meatballs, cavatelli and clams with mussels. It was all very good. The service was friendly and excellent. Huge wine menu from reasonably priced to the high end. Our ordered was taken by iPad and it was cool how she was able sequence the dishes out. Nice modern decor with a tasteful bird scheme of course.
