Meet the owner

In quaint villages across Italy, food has always played a big part of family life. And for centuries, Italian Nonnas have known that food is especially flavourful when eaten in season. The notion of cucina povera (literally meaning "poor kitchen") is all about making great platters of food with simple, fresh, high quality ingredients.

So when restaurateur Paul Grunberg (of L’Abattoir), interior designer Craig Stanghetta and executive chef Mark Perrier came together to open their own culinary venture in 2016, they took this simple-and-seasonal philosophy to heart. “When we conceived of Savio Volpe we wanted to offer simple, peasant-style cooking using the very best locally sourced ingredients,” Craig explains.

The restaurant might be simple in its approach, but its made an outstanding impact on the Vancouver dining scene. Packed nightly with foodies and families alike, the rustic osteria is one of the city's most celebrated restaurants. Earning critical acclaim from day one, the eatery was named one of Canada's Best New Restaurants for 2016 by enRoute Magazine.

If you can gather 8 people together try their group tasting menu. Let the food just make its way to the table and simply enjoy. Every item was delicious and a great way to introduce friends to their restaurant to sample various dishes. You leave full and content. Book a reservation weeks in advance to get a more desirable sitting time.

Vancouver Magazine’s Best New Restaurant for 2017 truly is as good as all the hype. Located in the foodie hub of Fraserhood, Osteria Savio Volpe serves simple Italian fare, without pretension or fanfare, made from fresh local ingredients. The menu changes frequently, but always features handmade pastas, homemade gelato and rich coffees with an old world feel. If Nonna wouldn’t serve it, then you won’t find it here.

Working with speed and precision in one of the city’s busiest dining rooms is hard enough, doing it with a calm and convivial attitude is even more impressive. Savio Volpe sous chef Melanie Witt is well respected among her peers for her culinary prowess (she previously worked in kitchens at Wildebeest and Bufala) and is truly in her element preparing classic, Italian comfort fare at this rustic Fraserhood osteria. Melanie was also the focus of a recent documentary titled Women on the Line by filmmaker Vanessa Ratjen. The film explores the role of female mentorship in male-dominated commercial kitchens.

Do your guests – and yourself – a favour and bring them to one of Mount Pleasant’s coolest new spots. From fresh pasta to wood-fired meats and antipasti, these rustic plates are handmade and contain the best of local B.C. produce, where possible.
