Before launching Scandilicious, a charming Scandinavian-style bistro in East Vancouver, ownerAnita Cotton was working as a stay-at-home mom, but there was always a budding entrepreneur lurking within her. The seed of inspiration was initially planted while she was on a 2008 trip to London, England with her daughter Kristina.
“We were near Kensington Palace and I could smell this most amazing aroma coming from a vending window,” Anita recalls. The two set out to discover what was making their stomachs growl and were drawn to a European-style waffle stand. “I bought one and it was incredible,” she adds.
When they returned home, Anita pulled out her beloved childhood recipes from her Norwegian mother and grandmother. Waffles are a mainstay in many Scandinavian homes, although they are especially popular among Norwegians. “My mom always had people in the kitchen for the best coffee and best waffles,” Anita explains. “I remember before my father died, he told me to keep my mom’s tradition alive."
Armed with inspiration, Anita set out to see if a Scandinavian bistro would work on the Vancouver dining scene. Within a year, Anita found the right location and opened Scandilicious. Locals immediately embraced the homey, family-run restaurant and spread the word about Antia's delectable waffles and Norwegian comfort food.
This adorable Scandinavian restaurant serves a full breakfast, lunch, and dinner menu with open-faced sandwiches, lefse, dumplings, and other delicacies from Scandinavia that you might not have heard of, but which are definitely worth a try. Their best menu item, however, is their waffles – often topped with eggs, or smoked salmon, or bacon, or whatever you can imagine tasting good on a waffle. A little known fact is that on Tuesdays they serve plain Belgian waffles with butter and syrup for only two bucks!
