"We've easily sold more than one million spring rolls since Saigon Soul Food opened in 2005," Cameron Topp estimates before his partner in life and business, Tâm Nguyễn, laughingly interjects: "and those spring rolls are all hand-rolled!"

After receiving accolades from her son's classmates and their parents for the spring rolls she served at a school function in 2003, Tâm and Cameron launched their gourmet Asian food business at the Milton farmers' market in early 2005. Their commercial kitchen in Hamilton, where Tâm and her team hand-roll, fry and flash freeze every spring roll they sell and offer frozen and prepared take-out on the spot, was established in December of that same year.

"Tâm is a very intuitive chef. She always innovates, improving upon recipes," Cameron says as he lauds his wife's culinary mettle. "I always cooked because my family couldn't afford to dine out," Tâm says. "And I experimented in the kitchen because I wanted more than the vegetarian fare of my parents' Buddhist diet," she explains of her early experiences making spring rolls at her mother's knee when she was eight years old, after her family fled Saigon for Canada. "The difference is that I pack more in my spring rolls than my mom," she admits.
