Pancho's Bakery

Adalberto Aguilar is a descendent in a long line of bakers going back to his great grandfather in Mexico. When he and his wife, Violeta Correa, moved to Canada in 2008 they noticed there were no Mexican bakeries here. A year later they opened Pancho’s Bakery. “I had expertise in being a baker back in Mexico. I came when I was 23 and my wife was 22,” says Adalberto. “We decided to open a bakery and manage it as a little family business. Over the past 9 years we’ve managed to grow the business quite a bit.”

Navigating through the bylaws and regulations of setting up a business while getting acclimated to a new country was a challenge, but together they’ve managed to turn Pancho’s Bakery into a small business success story, with two locations and a thriving food truck catering division. “Our success comes from the effort we put in the business every day,” says Adalberto. “It was 24 hours, 7 days a week in the restaurant. We never gave up.”
