As a photographer in the fast-paced world of fashion, Milton Nunes hopscotched from city to city across the globe. His travels and short-term stays in novel places allowed him to scour the world’s capitals for the best eats. Throughout his globetrotting he ate at countless restaurants and soon developed an extensive list of the hottest spots to dine.

Eventually, Milton’s list became so expansive as to include the best butchers and bakers in each of the towns he visited. “It was a priority for me and I spent time discovering food this way for years,” he points out.

An epiphany came while Milton was sitting in a café with a pastry in hand; his gut told him he didn’t want to pursue fashion photography anymore. So when his now ex-girlfriend suggested that he open a pastry shop, Milton embarked on a mission to learn as much as he could about baking.

To do so he enrolled in a pastry program at Toronto’s George Brown College and attended French pastry school in Chicago. Soon after completing this training, Milton opened one of downtown Toronto’s most treasured French-inspired pastry shops: Le Gourmand. His latest venture, Portland Variety, located right on the traffic-heavy corner of King Street and Portland, came to life in 2014.
