Matthieu Sallée, owner of Café Zinzin, loves to ski and so when he was 18, he got himself a job in a restaurant at the top of the Alps in Val d'Isère. He stayed in that job for five years, and that experience solidified his desire to balance work and pleasure.
He continued in the restaurant business after he moved from France to Canada, working as a general manager at a rustic restaurant in the Palais de Congrès in Montreal. That job taught him that a restaurant that may do well in Chambly wouldn’t necessarily do well in a city. Unable to convince his boss to make some changes, and also not willing to work nights and weekends, Matthieu decided he would open his own restaurant.
