Meet the owner

Nicolas Delrieu, originally from Saint Martin in the Caribbean, is the co-owner of Le Speakeasy, a restaurant that opened in April 2016 in Old Montreal. Nicolas’ first experience as a restaurateur didn’t start with Le Speakeasy, however. At the age of 18, he was already managing his first establishment. “I’ve always been exposed to the restaurant business. I even designed a restaurant from A to Z,” he recalls. Nicolas initially moved to Montreal to become a pilot, but during his studies, he worked part-time in a bakery.

After obtaining his pilot’s license, he still kept his job at the bakery, where he soon became manager. He stayed there for nearly four years until his friend, Cédric Saint-Onge, told him of his dream of opening a restaurant. Nicolas didn’t hesitate to partner with him. The two are now co-owners of Le Speakeasy. Later, they met chef Ash, who joined their team. “We are entrepreneurs and we were not afraid to learn the field,” says Nicolas, who adds that they started with a sandwich shop, that’s now attached to Le Speakeasy, a month before opening.
