Meet the owner

Sophie Bergeron met chef Jean-François Pigeon for the first time in front of a vacant building in Verdun. Both had been invited to meet there by Marc-André Paradis and Frédéric Leblond, the dynamic duo behind the BYOB restaurants Prince and Les Héritiers in Montreal. The soon-to-be business partners stood together surveying the illuminated front of a space that was full of promise.

Nestled at the intersection of three busy roads, it was the advantageous location of the former dojo that won Sophie and Jean-Francois over. They felt they were in the right place at the right time, just as Verdun was in full regrowth. So it was here that they decided to embark on an adventure and open a restaurant, in collaboration with their silent partners Marc-André and Frédéric, who gave them carte blanche to do as they wanted.

"When we got the key to the place, absolutely everything needed doing," recalls Sophie. "We only kept the hardwood floors. The rest has been renovated from top to bottom." The co-owners invested themselves personally, to the best of their abilities, in every step of the renovation process. Together they created a functional and pleasant kitchen and a welcoming, pared-down and attractive dining area, with accents of dark wood. After months of work, the 75-seat Wellington opened in September 2012. Verdun, which was nurturing its appetite at the time, welcomed them with open arms. "We weren't even open yet and we had over 1,000 likes on a 'what's new in Verdun' Facebook page," says Sophie.
