Meet the owner

In 2014, Actinolite owner Justin Cournoyer decided to make a huge change at his Ossington restaurant. The restaurant was popular and packed with customers, with a Mediterranean menu. Justin, admittedly bored, decided to take a leap of faith and changed the menu to what he describes as seasonal, regional Canadian cuisine.

Born and raised in Actinolite, a rural town located in central-eastern Ontario, Justin spent his formative years outside, getting dirty surrounded by nature. While reflecting on where he came from, the way forward became clear.  The place that is  infused with childhood memories, senses and a deep connection to the land was leading him to forge his own path. Following his passion and beliefs is what made Actinolite survive its evolution.

Justin’s passion and sense of responsibility to sustainable living is contagious. “This restaurant gives me meaning, it allows me to express myself through food,” says Justin. “I take time for people, I utilize the people around me, learn from the farmers."

Delicious! But sadly we left quite hungry:( I for one could have eaten at least twice the amount of food, my husband probably three times the amount - I guess we are gluttons. Didn’t care much for the desserts - I’m a huge dessert fan and always so look forward to dessert at the end of a nice meal but I was still craving something decedent and sweet after the corn ice cream followed by the mushroom ice cream - I get the theme and I love mushrooms but the desserts missed the mark for me.

We celebrated my husband's birthday at Actinolite and had the most incredible time. Chef and his team made the occasion feel special. We had the Chef's tasting, which was delicious. Each course came with its own story - and it was clear how much thought was put into each dish.

By far the best restaurant of Toronto in term of food, service and atmosphere. Could easily compete with a Michelin star restaurant. With his obsessed utilization of fresh local products Actinolite succeed in providing authentic flavours without overpowering any ingredient. The wine pairing is also excellent touching a variety of original combination. The fact that you find this amazing food in a simple and cordial atmosphere is for me Canada at his best!

All staff were professional without being pretentious. Will come back and would certainly recommend to anyone who enjoys tasting menus.

First restaurant review I’ve ever written and probably my last, but I love this place so much that I thought it important to spread the word. This restaurant is so passionate about their food and it shows in every single detail. Unique but approachable dishes served creatively with so much love and care. So many flavours matched beautifully together. The chef is clearly a genius and it would be a shame to live in Toronto and not experience this place! Side note: Check out the website and read about their mission to stay local, seasonal and sustainable.

Best food and service I’ve had compared to any other restaurant I’ve tried in Canada. Dishes were simple and yet complex in flavours. Delightful tasting menu, with not a single misstep. Service was impeccably attentive and coordinated. Wines were excellent. Very impressed!

Actinolite is an interesting concept. Where the chef is certainly passionate it sometimes leaves little room for the guest to explore the dishes presented on their own. Learn to read the table, we all can enjoy the food without having service staff talking to us for multiple minutes or interrupt conversations to introduce wine, we can ask later or find a suitable time to interrupt. Most of the dishes impressive and tasty. Wild ingredients and lesser known preparations a sometimes need refinement, overall the portions were too small, left us wanting more proteins and extremely expensive. Other tasting menu based restaurants have managed to put more on the plate for less, within the same quality spectrum with similar care, the story doesn’t always balance the value.... Wines were all quite good on their own but pairings questionable in most cases. Both items introduced separately for each course with little to no link established between food- drinks and equally as much to be perceived upon tasting. Music is too low/ non existent and overall dining room decor is not what you’d expect when you pay 450$+ for 2 people.

Wonderful restaurant. Perfect balance across the tasting menu - also just the right amount of food. We enjoyed Actinolite more than any other restaurant we've been to in a while, and that includes major destination restaurants in Toronto, Manhattan, London, Amsterdam, Vienna and Budapest this year. We've told all our friends about it and we'll be back.

What a fun and lovely experience and a wonderful concept. We had wine pairings with our dinner and it was interesting and very well paired. The meal itself was so fresh and delicious and the combination of flavours in each dish was so perfect. We loved talking with Chef Justin and the whole staff was very knowledgeable about the dishes and their ingredients as well - we learned so much and were amazed by the thoughtful creation of each dish. I especially love that we could return in a month and enjoy a completely just-as-fabulous meal. Don't let the set menu deter you if you have food allergies - the team was happy to accommodate mine which was so appreciated. We'll definitely be back!

A wonderful, creative, and delicious meal. The atmosphere was lacking because there really isn't a private cozy table for two in that space. You are either right next to another couple, or beside the kitchen flow. You can overlook that fault because everything else is so terrific.

One of the best dining experiences we had in a long time. Everything was perfect. The food is outstanding: it is Farm to Table but with so much creativity and passion that you end up waiting with anticipation to discover what will come next... Chef Justin is conveying his passion with a lot of kindness to all his guests and the rest of the service team follows his lead. Everyone was so friendly and professional. This restaurant is extraordinary.

We really enjoyed talking to Chef Justin, several times over the evening, as he explained his dishes, and philosophy behind creating them. This was not a token appearance, as we have had in the past. Surprisingly our favourite dishes are not those where protein was the star, we really loved the savoury desserts. The wine pairings were just right, and the offer to split a pairing between 2 was also appreciated. It's another reason why we want to return in another season, and to see what produce inspires the menu. The atmosphere was marred by the noise when the room was full, its not a place for an intimate dinner. But the taste of the food wins out.

This place is beyond. It doesn't even classify as s restaurant. Its such an amazing experience. A true education in food, farming, foraging, flavors, textures. The wine pairings are a must. I can't wait to go back in the fall to explore an entirely different sensation.
