Meet the owner

In 2014, Actinolite owner Justin Cournoyer decided to make a huge change at his Ossington restaurant. The restaurant was popular and packed with customers, with a Mediterranean menu. Justin, admittedly bored, decided to take a leap of faith and changed the menu to what he describes as seasonal, regional Canadian cuisine.

Born and raised in Actinolite, a rural town located in central-eastern Ontario, Justin spent his formative years outside, getting dirty surrounded by nature. While reflecting on where he came from, the way forward became clear.  The place that is  infused with childhood memories, senses and a deep connection to the land was leading him to forge his own path. Following his passion and beliefs is what made Actinolite survive its evolution.

Justin’s passion and sense of responsibility to sustainable living is contagious. “This restaurant gives me meaning, it allows me to express myself through food,” says Justin. “I take time for people, I utilize the people around me, learn from the farmers."

We have been going here for years and love it. I think, however, the meal this time was the best. The service was as usual outstanding. It is a high end restaurant with a true neighborhood feel.

Went for dinner for my husband’s birthday and it was one of the best meals we’ve had in a long time. We were surprised and delighted by off menu items so the 7 course meal was actually 11. Erin, the hostess, was a gem who knew so much about the food, the restaurant and the industry in general. We will definitely be back.

This is the third time I’m here. Both my partner and I are very impressed with the food, the service and the atmosphere. Justin is a very passionate chef. I love his food and his idea of gastronomy, and how he and his associates implement such idea. I have been here 3 times in the past 4 years and I can definitely see his food and service become more and more complete in the journey. I wish Justin and his team a great success in the coming decade, so recognized by a broader audience and graduate to the world stage.

A complete winner of a restaurant and a memorable meal. We all had the full chef’s menu with wine pairings. We had an extra bottle of wine too. It says 7 courses but goodness there were more than 12. I lost count! Amazing service, tastes and presentation. Chef was so impressive to come to the table Often to Discuss the food. He noticed I didn’t eat the seafood courses (was just going to give to hubbie) and brought me amazing alternatives! That is service! It is expensive and worth every penny. Definitely a top Toronto restaurant in all regards! I hope it stays around a long time!

My partner and I visited Actinolite on Valentine's Day, and we were both blown away by the incomparable dishes, exceptional service and knowledge of the staff and overall experience. We were served the Chef's Menu (a menu that is, rightfully so, ever-changing and evolving) and opted for the wine pairings chosen by the team, and we were supremely impressed. We had a chance to interact with Chef Justin whose passion overflowed for the dishes he served us, and his team was equally as engaged and excited for our enjoyment of the food. From start to finish, Actinolite proved to be an unforgettable dining event to which we would recommend to anyone with an interest in local and incredible food.

A wonderful experience from start to finish. All the courses were creative and delectable. The menu listed 7 courses, but at no cost they added a couple of extra appetizers not included on the menu. The beef broth, an add in, offered at the start of the meal was outstanding and the way it was prepared was explained to us by the chef himself. Each item that followed was also explained in detail as it was being served. It would be hard to pick the best course, from the duck, the oysters, the beef tartar and more, as they all were outstanding. The wine pairings were perfectly suited to the courses presented. The servers were also attentive and very professional, although a couple of courses were presented by the sous chefs who prepared them. 5 stars all the way. It wasn't cheap but worth the price if you like gourmet quality food.

Felt warm, inviting and cared for. Can’t ask for more. The wine pairing was a delight. We were treated with the utmost respect and felt simply privileged for having dinner with you!
