Zesty Mexican-style corn and pepper relish on grilled chicken

Looking to add some flair to your chicken? This zesty Mexican-style relish is loaded with both flavour and nutrition.  Team it up with grilled chicken that's packed with protein, fibre, vitamins and minerals, and who knew that eating healthy could also taste so good?

Zesty Mexican-style corn and pepper relish on grilled chicken

Ingredients

Here's what you'll need:

  • 2 cloves garlic, crushed
  • 10 ml (2 tsp.) chili powder
  • 1 ml (1/4 tsp.) salt
  • 45 ml (3 tbsp.) freshly squeezed lime juice
  • 30 ml (2 tbsp.) canola oil
  • 750 g (1 1/2 lb.) boneless skinless chicken breasts, pounded to about 1 cm (3/8 inch) thick
  • 175 ml (3/4 c.) low-sodium chicken stock
  • 300 ml (1 1/3 c.) freshly drained canned or thawed frozen corn kernels
  • 1 large roasted red pepper, diced
  • 150 ml (2/3 c.) drained canned black beans, rinsed
  • 30 ml (2 tbsp.) coarsely chopped red onion
  • 1 jalapeño pepper, seeded and finely chopped
  • 1 ml (1/4 tsp.) salt
  • 45 ml (3 tbsp.) chopped cilantro

Cooking instructions

  1. Combine the garlic, chili powder, salt, two tablespoons of lime juice and the oil in a medium bowl. Add chicken and rub with marinade. Let stand at room temperature for no more than 15 minutes.
  2. Preheat the grill or barbecue to a medium-hot setting.
  3. Grill chicken five cm (two inches) from heat just until cooked through, or about three to four minutes per side.
  4. To make the relish, heat stock in a large frying pan. Add corn kernels, pepper, black beans, onion, jalapeño and salt. Heat through. Just before serving, stir in cilantro and remaining lime juice.
  5. Serve chicken topped with your delicious homemade relish!
