Crêpe It Up was the brainchild of Chris Lee, who opened up the Church Street location in 2006. But it was Maria Sotirocoulou who really elevated the restaurant to a new level when she took over in 2011. Maria believes the key to life is having a passion for your work without letting it take over, and finding joy in the simple things. “For a very long time, I kept saying to my employees that if they don’t like what they’re doing, life is miserable,” she says. She runs Crêpe It Up simply because she can’t imagine doing anything else.
For Maria, joy comes from the customers who walk through the door. “I like to be with people,” she explains. She thrives on the energy that her customers bring into Crêpe It Up, whether they’re popping in for their morning coffee or sitting down for one of Maria’s amazing crêpes.
From the gargantuan Monster Crêpe that’s stuffed to the gills with ham, spinach and veggies, to customized crêpes in which customers choose from over a dozen ingredients, Crêpe It Up has a crêpe for everyone.
