Too often, traditional cuisines and tastes might go undiscovered by those outside their base. They can offer joy to families and communities across generations, but it takes a place like Wawel to go beyond and reveal a universal appeal. “I’m still amazed by the variety of people who come here and find themselves attracted to this place!” says Janine Lauster, co-owner of Wawel’s St-Laurent location, and international business graduate from Germany who has a mind for the bigger picture.

“We get the regular crowd of artists, students, intellectuals and businesspeople that come with the neighbourhood, but tourists from all over the world gravitate to this place. Japanese, Chinese, South Americans and the usual bevy of Americans on holiday seem to wander in here and find themselves marked by our variety and the quality we pursue.”
