This healthy cabbage dish features caraway & apples

Ingredients

  • 10 ml (2 tsp) canola oil
  • 1 small onion, finely chopped
  • 3 ml (3⁄4 tsp) caraway seeds
  • 500 g (1 lb) green cabbage, cored and thinly sliced
  • 15 ml (1 tbsp) rice wine vinegar or cider vinegar
  • 2 ml (1⁄2 tsp) salt
  • 2 small crisp red apples such as Gala or Empire, cored and cut into small cubes
  • 5 ml (1 tsp) honey
  • 30 ml (2 tbsp) chopped walnuts, toasted (optional)

Directions

Preparation: 15 minutes. Cooking time: 15 minutes. Serves 4.

  1. Heat oil in large non-stick frying pan over medium heat. Add onion and caraway seeds. Sauté until onion is softened, or about five minutes.
  2. Stir in cabbage, vinegar and salt. Cover. Cook just until cabbage wilts, or about four minutes. Uncover. Increase heat to high. Add apple and honey. Cook, stirring frequently, until apple is crisp-tender and most of the liquid has evaporated, or four to six minutes.
  3. Transfer to a serving plate. Top with walnuts, if using, and serve.
